বেগুনি…Fried Brinjal Besan Mixture
This is a starter item commonly observed in Banquets, this is prepared after making slices of Brinjal and dipping those slices in Besan(Gram Flour) mixture and then fried in oil, i mean hot oil. Obviously salt is added in the Besan mixture otherwise…no taste.

Hey Jyotirmoy , is it called Baingan ( Begun ) Bhaja in Banglaa ? . We Maharashtrians call it Vaangyaachi Bhajee and marinate the Brinjal slices with Ginger Garlic paste before dipping it in Besan batter. Why is it in rectangular shape instead of oval ? #MyFriendAlexa #SuatawdeReads
Actually Begun Bhaja is a different item, In Begun Bhaja the Brinjals are sliced and fried in oil, besan mixture is not used, Beguni is same as Vaangyaachi Bhajee where Besan micture is used.
Generally its sliced in rectangular shape while preparing for any banquette, i think its time effective.

Baigan Pakoda, I love it. Added green chillies in the batter make it super delicious.
Next time will follow your suggestion while making it.
You call it Begun Baja and we Punjabis make pakoras of anything. My favourite is spinach and potato.

We call it Begain pakoda. Anything dipped in besan and fried becomes Pakoda for us. 🙂
Yah,almost same here…anything dipped in besan and fried becomes pakoda but some items have different names also,like beguni,there is Peyanji…made by onion following the same process.
My husband loves this… on a holiday this is mandatory to be in the lunch….

Brinjal dipped in gram flour makes an ideal combination. We make a whole batch of pakodas when it rains. It’s a perfect accompaniment to ginger tea.

Fried brinjal! Haven’t eaten it ever. Will try. But only Salt is added in besan? No chilli, Ajwain, amchur etc?
